I use firm tofu to make buffalo tofu strips..and everytime i do it , i make its golden brown on both sides and then i add the sauce..before i placed it in the freezer for an hour so it can have a meaty taste..but when i bite into it, its gooey in the center..what am i doing wrong?? should i bake it instead of fry it?

I bake first, get it crispy- THEN add sauce and fry- I hate  gooey tofu lol

right but what I did , didnt work....I am wasting money.
